Warm Quinoa Breakfast Bowl


One of the keys to successfully maintaining the Paleo lifestyle is planning ahead. With that in mind, I try to keep a few cups of cooked quinoa on hand.  I woke up one morning and just wasn’t interested in yet another veggie scramble with bacon (crazy… I know… but stay with me). I wanted what a bowl of oatmeal with brown sugar, raisins and milk used to give me — warmth, comfort, fuel for my busy day — but without the sugar rush, insulin spike and inevitable crash.

Enter the Quinoa Breakfast Bowl.  Quinoa, dried cranberries, chopped walnuts, a pinch of pumpkin pie spice, almond milk and a drizzle of honey (honey is optional, of course).  And the beauty of it is that you can make it one bowl at a time or mix up the dry ingredients in a larger batch for your go-to primal morning grub.  Warm it up, add some almond milk and you’ll be well fueled and on your way.

    My husband loves this as a quick breakfast before work! Also, I had some left over quinoa that I made, replacing half of the water with coconut milk… We used that for the breakfast quinoa, it was subtle and delicious! Great replacement for oatmeal!
