Ciarra’s Primal Crunch

Ciarra’s Primal Crunch will be a staple in your kitchen.  This sweet, crunchy and slightly sticky mix is perfect for topping fruit and coconut whipped cream, making a cobbler, or pressed into a crust for tarts and pies… or just nibbling on for a sweet treat. My mission is to make this into a cookie as well. If you beat me to it, I will give you a big virtual high-five if you share it with me.

Ingredients:

  • 1/2 cup each of pecans, walnuts and almonds
  • 1/2 cup medjool dates (honey can be substituted)
  • 1 TBSP coconut palm sugar
  • 1/2 tsp almond extract
  • 1/2 tsp kosher salt

Prep:
Load the nuts into a food processor and let it go until they break down into what they would look like if you had just bought them already chopped. Then add the pitted dates, coconut sugar, almond extract and salt. Run on high until a sticky meal is formed. That’s all she wrote.

Now, go have your way with this sweet treat. I’m making an apple crisp with dried cranberries and fresh blueberries right now…

    Can another nut be substituted for walnuts or will this work just as well with just the almonds and pecans.

      I was staring at some leftover cashews wondering that exact same thing a few minutes ago… As for splitting half almond/half pecan, I think as long as you compensated for them volume-wise you’d be fine!

      I found it randomly at a local whole foods market for under $6 for a medium sized bag. From what I can tell coconut palm sugar has a lower GI rating than honey and has tremendous nutritional value. I’m referring to an article I came across on Mark’s Daily Apple and the main website for coconut palm sugar. I’m a believer in limiting all sweeteners personally. However, I love the nutritional qualities of coconut palm sugar and plan to make this my sweetener of choice… next to dates. If you find any other resources for or against this, do share!
