Apples are super good for you! Did I just blow your mind? No? Shoot.
After doing a little reading, I suddenly don’t feel like my favorite go-to snack of apples and almond butter is a cop-out anymore. Apples are loaded with fiber, antioxidants, vitamins and minerals. According to the Everything Superfoods book, Australian researchers have found that apples have a profound impact on how well skin ages. Apples help improve lung function, regulate the way your body uses sugar, and lower blood cholesterol. They also work to prevent constipation, type 2 diabetes, and cancer.
I’m making a quick dessert tonight for my family. Apples, fresh blueberries and some dried cranberries will round out the antioxidant-rich filling in this Superfood Apple Crisp. It’s topped with Ciarra’s Primal Crunch (that’s me!), for a heyday of omega-3s and protein.
Enjoy this sugar-free, gluten-free, antioxidant-rich, fiber-loaded, protein-packed, superfood dessert. It’s a treat you won’t regret. In fact, have seconds… you’ll be better for it.
Ingredients:
- 5 medium red apples, cored and sliced. Keep the peel on!
- 1/4 cup dried cranberries
- 1/2 cup fresh blueberries
- Juice from half a lemon
- 1 TBSP coconut palm sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp kosher salt
- 1 tsp vanilla extract
- A batch of Ciarra’s Primal Crunch
Prep:
Preheat the oven to 350 degrees.
Slice the apples, leaving the peel on! So much nutrition is locked in that peel, don’t get rid of it! Add the cranberries and blueberries to the apple slices and cover in the fresh lemon juice.
Mix in the coconut palm sugar, pumpkin pie spice, salt, and vanilla extract. Pour into your preferred, ungreased baking dish. Top with Ciarra’s Primal Crunch.
Cover with foil and place in the oven for 30 minutes. At 20 minutes of baking time, remove the foil so it can finish uncovered.
It’s a good idea to let this rest after you remove it from the oven. Recover with that foil and let it sit for 10-15 minutes before eating. It is delicious with some almond milk ice cream, coconut whipped cream or just by itself. If you are still eating dairy, try it as a topping on sugar-free greek yogurt!


While my husband devours his dairy and sugar laden flourless chocolate cake tonight, I may have to whip up this crisp……after all, a little dessert will help me get over Hump Day.
