A couple months back I was doing my weekly routine of pouring over new recipes on Pinterest, when I came across the Iowa Girl Eats blog. This girl is adorable and her food is fantastic! I printed off a recipe for her Chili Lime Chicken Burgers and filed it with my stack of other “must do” recipes. Sadly I never got around to making it…
Last night I was staring at half a lime and some defrosted ground turkey. Her recipe popped back in my head! Of course, now that I’m Paleo I had to make some modifications. Here’s my interpretation of her fantastic looking chicken burger. Hope you like it!
- 1 lb ground turkey
- 2 garlic cloves, minced
- 2 scallions
- 1 serrano (or jalapeño) pepper
- 3 mushrooms, small dice
- zest of half a lime
- 1/2 tsp kosher salt
- 1 egg
- Coconut oil
Preheat your grill–in or outdoor.
Put the ground turkey in a large mixing bowl and prepare the fresh ingredients. Mince the garlic, thinly slice the scallions, do a fine dice on both the seeded Serrano pepper and the mushrooms and zest half a lime.
Add these ingredients to the ground turkey, also add the kosher salt and egg. Roll up your sleeves and use your paws to combine. It really is the best way to bring together ingredients in ground meat. Be sure to wash your hands well after this… not that you would go about cooking with gooey meat hands…. I hope.
If using an indoor grill, grease it with some coconut oil. Coconut oil is really the fat of choice for this burger. It adds a subtle savory element that you will enjoy.
Make four large patties and cook through.
I’m wrapping my burger in iceberg lettuce and topping with fresh tomato, however this burger begs for some Salsa Fresca and fresh guacamole.
