What was the best thing you ever ate
This one is so simple but so good. Hands down it’s got to be Slow Cooker Kalua Pig from Nom Nom Paleo. Basically, it’s a big hunk of pork rubbed with salt and slow-cooked for 18 hours in the crock pot. I’ve never had so much anticipation waiting for anything to be cooked and ready. The outer meat caramelizes and the whole thing is fall-apart tender. YUM!

What’s the best thing you ever made?
Probably my favorite recipe re-creation is a Paleo version of Green Papaya Salad. In 2011 I went to Bali, and it was one of the dishes I couldn’t get enough of while I was there. I remember sitting at a beachside restaurant on Nusa Lembongan, my mouth absolutely on *fire* from abundance of birds eye chilis they put in – even though I asked for not spicy. Despite that, I couldn’t have been happier because I was sitting in paradise. When I got home, I didn’t waste any time making a version that way Paleo-friendly: Green Papaya Salad. Though it doesn’t fall under any special protocols, you can make it without any added sugar. 

How did you come to find Paleo and what lead you to commit?
I’m a high school chemistry teacher, a holistic nutrition practitioner, and a competitive CrossFit athlete. I started eating Paleo back in January of 2010 because I wanted a way to improve my health and athletic performance. I’m pretty strict most of the time though I do adapt Paleo fit my athletic goals (such as using whey protein while in competition season). I’ve been food blogging for a long while for fun, but Stupid Easy Paleo started in 2011 as a way for me to share all my recipes in one place.
