This girl continues to blow my mind with her incredibly inventive uses of Paleo-friendly ingredients. No, cavemen never ate a darn thing this girl makes, but between you and me, it was their loss.

She and I were chit-chatting last month about how cool it was that we were planning our Whole30s at the same time. (What’s a Whole30? It’s the elimination diet based on this excellent book: It Starts With Food.) She is just wrapping up her successful Whole30 and passing out high-fives to everyone who else who also completed theirs. Sadly, I have been walking around with a cone-of-shame since I was not able to meet my challenge. More on that later… But for now, Vanessa is celebrating and doing it in true Clean Eating With a Dirty Mind style!

Hey there Popular Paleo readers! Guess what? Our Whole30 has concluded. Cue Taps. A moment of silence in respect for all the real food that has nourished our bodies over the last 30 days…and scene. We’re done! BRING ON THE BOOZE AND THE CHOCOLATE! Oh wait maybe I should finish this blog post first. So how did it go you guys?! Tell me all the juicy details, I wanna know everything! This is the part where I really want you to tell me how Jordan Catalano kissed Angela and then totally ignored her in the hall when he walked by on his way to English class. And then I have to remember that we’re talking about the juicy details about food and that it isn’t 1994. Ugh. I hate when that happens. So Jordan Catalano aside how was your Whole30? Life changing? Mine went really well!

Like anything else I had some good days and some bad days. I didn’t stick to it 100%, more like 95%. I had to have some dark chocolate on Halloween because all the kids with their huge bags of Reese’s and Snickers, and Twix, and Kit-Kats that kept coming to my door making me jealous. So I indulged in half a bar of Dick Taylor two ingredient fine dark chocolate. I loved every second of every bite. I’ll tell you one thing, you really enjoy food more when you don’t eat it all the time. Man it was delicious. I also probably ate way too much Nikki’s Coconut Butter in the Pumpkin Spiced Donut Flavor. Can you really blame me though? Have you guys tried that stuff? It’s insane. INSANE. I will order every last jar that they have. Seriously. It’s like HEAVEN. I also had a Steve’s Paleo Krunch Bars for breakfast two days when I was crazy strapped for time. Other than that I was squeaky clean!

So how do I feel? I noticed a ton of things going on this month. First and foremost my sleep improved drastically. Normally I get up at least once a night and don’t feel completely rested in the morning. That’s on top of it taking me about 30 minutes to even fall asleep. After about a week I was sleeping the whole night through and would crash as soon as my head hit the pillow. I also noticed my moods were a lot more stable. If any men are reading this then “Ear Muffs!” or Eye Muffs? My normally severe PMS symptoms were incredibly light and super easy to get through. I notice that with the absence of gluten and sugar my periods are so much easier to get through. Gross can we stop talking about periods now! Eww. My “seasonal” allergies almost disappeared entirely. I believe this is due to removing casein from my diet. Casein which is found in dairy products makes your body release histamines and in some people these histamines create full on allergy symptoms which are often mistaken for seasonal allergies. So all in all I feel great! This 30 day challenge just reinforced why I choose a Paleo lifestyle. I just function and feel better. I’m really going to watch my sugar intake now because I know how much it effects me now. After about two weeks I didn’t even crave it anymore. So if you haven’t tried a Whole30 yet, then in the words of Nike, just do it! Seriously, it’s only 30 days and you’ll feel like a million bucks! So lets hug it out and go get a cocktail!

Paleo Baked Pumpkin French Toast

Step 1: Make your Paleo Pumpkin Bread

Paleo Pumpkin Bread

Ingredients:
4 organic cage-free eggs
1/2 cup canned pumpkin puree
1 cup coconut palm sugar
3 tablespoons canned coconut milk, full fat, room temperature
1 vanilla bean, split lengthwise and seeds scraped
1/3 cup coconut oil, liquid
1 cup fine blanched almond flour (Honeyville Brand)
1/4 cup coconut flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1/2 teaspoon pink himalayan salt
1/4 teaspoon ground cloves

Directions:
1. Preheat oven to 350. Grease an 8×5 glass loaf pan liberally with coconut oil.

2. In a large bowl add the eggs, pumpkin puree, coconut palm sugar, coconut milk, and contents of one scraped vanilla bean. Stir together with a whisk. Then stir in the coconut oil. Continue whisking until ingredients are completely combined. Set aside.

3. In a medium sized bowl combine almond flour, coconut flour, baking powder, baking soda, cinnamon, pumpkin pie spice, salt, and ground cloves. Stir together with a fork until mixed.

4. Now fold the dry mixture into the large bowl with the wet ingredients and whisk until combined. Use a rubber spatula to transfer the batter to the greased glass loaf pan. Bake for 45-50 minutes or until a toothpick comes out clean. Let cool before slicing and serving. Enjoy!

Notes:
Costco is having this amazing sale on vanilla beans right now. GO GET SOME. You get something like 10 whole beans for $13. It’s insane. I’ve paid $13 for 2 vanilla beans before at the grocery store. If you don’t have access to a Costco or vanilla beans go ahead and sub with a teaspoon of vanilla extract and add it to your wet mixture when you would add the scraped beans. Vanilla beans are absolutely amazing and totally worth every penny but I’ll leave it up to you.

Baked Pumpkin French Toast step 2 by Clean Eating With a Dirty Mind 

Step 2: Make your egg mixture

Ingredients:

6 organic cage-free eggs
1/2 cup canned coconut milk, full fat, room temperature
1 tablespoon pure maple syrup
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/4 teaspoon ground cloves
pinch of pink himalayan salt
grass-fed butter for garnish

Directions: 

1. Preheat oven to 350F.

2. Put all of the ingredients in a bowl and whisk until combined.

3. Slice entire loaf of bread. Use a spatula to remove each slice of bread. Layer the slices of bread in an 8×8 square glass pan.

4. Pour egg mixture on top of the layered bread in the glass pan. Let sit for 10 minutes. Bake for 40-45 minutes. Slice and serve with grass-fed butter, maple syrup and whipped cream.

Baked Pumpkin French Toast with Coconut Whipped Cream

Paleo Whipped Cream
Ingredients:
1 can coconut milk, full fat, refrigerated overnight
1 tablespoon pure maple syrup
1/2 teaspoon vanilla
Pinch of pink himalayan salt

Directions:
1. Scrape the hardened top cream layer of coconut milk out of the can. Then add the rest of the ingredients. Use a hand mixer, immersion blender or whisk to mix together. Place in the refrigerator uncovered to thicken the mixture if needs be.

    Yum! I made the bread and never did get around to making the french toast! This bread is delicious! I will be making this instead of pumpkin pie for Thanksgiving this year. I’m new to paleo and am so thrilled to find a recipe that tastes great! This bread reminds me of my non-paleo zucchini bread recipe. Can I sub zucchini for the pumpkin in this recipe? If so, how much should I use?

      It’s not my recipe, you’ll have to ask Clean Eating With a Dirty Mind :-) However, something tells me that she either has or can direct you to an equally yummy zucchini bread recipe since most Paleo recipes don’t take well to substitutions.

    Tried the pumpkin bread itself and it’s a keeper. My husband said, “this is good! What did you make it with? Flour?” So that’s always a good sign ;)
