A vegan, a vegetarian and a Paleo eater walk into a bar…
OK, maybe you’ve heard that one before. But how about sitting down for dinner together? In my circle of close friends we have everything from “anything goes” to Pescatarian to a fairly flexible Vegan to Paleo (yours truly!) and we all love to cook… and eat. Occasionally we get together to make a meal–ONE MEAL–that we all enjoy. Think that sounds impossible? With a little planning, it’s actually quite fantastic.
At our last gathering we enjoyed:
- Salmon with lemon, garlic and grass-fed butter in foil packets
- Spaghetti squash sautéed with prawns, garlic, lemon, capers, feta and basil in veggie stock
- A salad of romaine, pears, feta, dried cranberries and pecans
- Pan-roasted asparagus in garlic and chili infused olive oil
Not bad right? It was very easy for us to navigate this menu. If we needed to eat around something or just pass on it, it was simple to do. We were totally stuffed, and frankly a little impressed with ourselves for putting together such a delicious meal. It got me thinking about all of you out there…
With the holidays around the corner, my hunch is that many of you who follow this blog are thinking, “uh oh… I could probably handle Paleo tweaks but now so-and-so is coming and they’re vegan/vegetarian/pescatarian. Crap.”
Even more intimidating than managing competing food lifestyles is accommodating allergies. When dietary restrictions are preference-based, at times the mom in me wants to handle it with “you get what you get so don’t throw a fit,” but allergies or aversions for ethical reasons are a different animal. No eggs. Lactose intolerance. No nuts. Celiac. Autoimmune protocols. No animal products. Yikes! That’s enough to make me a little nervous too.
Friends, I’ve got good news: “oh crap!” no more! Here are FIFTY delicious recipes from around the web that will fit any specialty diet trickery your holiday guest list throws your way. Plus a handful of Paleo-Vegetarian/Pescatarian recipes that are just yummy!
PALEO as you likely already know, is a diet centered around pastured and wild meat sources, vegetables and tubers, fruit, seeds, nuts and healthy fats. It omits any foods that carry baggage with it like soy, legumes, refined sugars, gluten, most grains and for the most part, dairy.
VEGETARIAN is a diet comprised of vegetables, legumes, grains and soy, and often accepts eggs and dairy products such as milk, cheese and butter. Many vegetarians are comfortable eating seafood, which is called a PESCATARIAN.
VEGAN diets are based solely on foods which are free from any and all animal products. This includes all dairy products like butter and ghee and also honey (that was a tricky one for me to catch!).
On honey… Since it is not vegan-friendly, remember that you can always select from coconut palm sugar, coconut nectar, pure maple syrup and medjool dates as an alternate sweeter accepted by all diet profiles.
The general strategy for building meals is to pick recipes that fit at least two of the dietary criteria you’re serving. Also try to pick a recipe with a neutral base and offer toppings or conflicting ingredients on the side. For example, make a grain-free pizza crust with a dairy-free sauce base and a few vegetables. Then set out goat cheese or pastured bocconcini and some grilled tofu, shrimp and chicken. Or another idea is to do a big batch of cauliflower rice with tons of fixings on the side for personal “burrito bowls”. Prep Mexican Lemonade Prawns, marinaded tofu, lots of grilled vegetables and some pastured, organic cheese and sour cream. Maybe have some non-GMO organic tortilla chips on the side for your grain eaters. This is totally do-able, guys!
