The Best Thing Yes to Yummy Ever Ate!

Abby from Yes to Yummy is inspiring for many reasons. The first is that her motivation for transitioning over to the Paleo way of eating is very relatable. I mean, how many of tried to lose weight by extreme calorie restriction only to feel hungry, fatigued and deprived? Paleo offers us an authentic ticket to overall health! Second, she’s inspiring because this blogger is still in high school. That’s right—all of the recipes and perspective you’ll read on Yes to Yummy are coming from a teenager! Abby shows that anyone can make the choice for improved health and sustainable nutrition. If you are thinking about cleaning up your diet, embrace who you are and where you’re at and take advantage of the unique elements in your own life. What was the best thing you ever ate?
I think two reasons why Paleo dishes taste so great is the quality of the meat and the deliciousness of the fat. Ever wondered why a store-bought chicken breast tastes like rubbery nothing? Two of my go-to recipes unsurprisingly feature meat and fat: the first being Nom Nom Paleo’s Spatchcock Chicken (the recipe I use is on her app, but the one on the website is very similar). With past roasted chicken recipes, I’ve found that the skin never gets crispy enough and the white meat ends up dry; with this chicken, you get crunchiness and juiciness all over. I fondly call this chicken barbaric, because really, the only way to eat it is with your hands and a large stack of wipes. My other favorite is Balanced Bites’ Spaghetti Squash Bolognese. The dish really doesn’t need the spaghetti squash—the sauce is SO good you could eat it alone with a spoon…and believe me, I have. It’s perfect for a cold, rainy day and can be made easily in a pinch.

What’s the best thing you ever made?
The best thing I ever made Paleo was my chocolate mousse pie. For as long as I can remember, chocolate mousse has been my favorite dessert. If the decadent dessert was on the menu, I was sure to order it. While stumbling around the internet, I noticed several recipes that used avocados for creaminess and body instead of dairy products. I was a little—OK, VERY—skeptical at first, but one day, I decided to give it a try. What I produced was pure bliss: the fruity notes of the avocado perfectly complimented the dark, bitter flavors of the chocolate, and the nutty crunch of the crust provided great contrast to the silkiness of the mousse. I could eat this dessert every single day…and I personally think it’s tastier and much more satisfying than real mousse. The whole dessert is gluten-free, grain-free, dairy-free, soy-free, AND vegan.

How did you come to find Paleo and what lead you to commit?
While my fellow teenagers rush off to sports practice or theater after school, I come home and experiment away in the kitchen. I like taking traditional favorites and giving them a healthier spin, all while using the best ingredients I can find. I’ve had a wheat-free and protein-based diet for almost a year now and have been following a Paleo-style template for about six months. I used to be incredibly strict about what I ate—no treats, low-fat, and very calorie restrictive—but I’ve loosened up significantly since going Paleo. I am completely gluten-free and grain-free and use only unrefined sweeteners when baking. I do enjoy a bit of full-fat dairy, but prefer to use it for texture and flavor as opposed to the star of a dish. I let myself have a Paleo-friendly treat a few times a week and try to eat as many vegetables as possible.

I started my blog by suggestion of various family and friends, who all wanted to see just what I was making every single night. I was a little hesitant at first, but once I got going, I was hooked on blogging. I’ve met so many amazing people and discovered all kinds of new ingredients and flavors through the online Paleo community…and I couldn’t be more grateful.
