OK, so this is gonna sound so much worse than it is… kinda.
You take a beef liver. You partially freeze the thing (or partially thaw, depending on your starting point). Then dice it into tiny pieces. Lay the pieces on a parchment-lined tray and arrange so they don’t touch. Pop back in the freezer to store. Annnnnd occasionally toss a few down the hatch before they get freezer-burnt.
It’s certainly a clever way to get liver in your diet without having to eat it in a recipe. However, the down side is the mental hurdle that you’re swallowing raw liver. If you stall, it’ll… melt. So not cool.
If you want to give this a try, do as my husband says and “come committed”. Grab those little pieces in one hand, a tall glass of juice or water or whatever in the other, and send it. Definitely don’t dilly-dally making up your mind.
I did this for a couple weeks and did eventually get used to it, but not without a hint of dread whenever it was liver time. It didn’t take long to fall out of the habit though. Now I’m considering dessicated liver pills. Truthfully, they aren’t terribly expensive, and if it’s got the same benefits, why not?
Which way is right?
Is there an advantage to swallowing raw liver? There’s definitely the argument for consuming a whole, unprocessed food. And if you order it from a rancher who raises 100% grass-fed and finished cows in an organic environment, then you really know that the quality is top notch. But there are also liver pill supplements that you can buy too. So ultimately it’s your decision.
Consider the cost. Consider your priorities. Consider your gag reflex. And then do what’s right for you. And for what it’s worth, I’ve got these two brands in my Amazon cart right now… I’m debating which one to go with:
A little disclaimer…
So I’m not a nutritionist and I don’t intend to tread into the waters of how much liver should a person consume… and the related health benefits… and can you eat it while pregnant… and so on… I will just put this post out there as a resource, if you’re like me and felt that doing the organ meat thing was a necessary evil and needed an alternative to actually eating it. Like with chewing and stuff. Unless it’s a really great pate, it’s just not for me.
